Types of Grape: 

Cabernet - Sangiovese - Merlot

 

Wine making:   

The grapes are entirely handpicked, placed in crates, and lightly crushed.  The different types of grapes undergo alcoholic fermentation in separate containers, with the addition of selected yeasts.

A temperature control system ensures a maximum extraction of colouring agents while slows down the fermentation, in order to allow a full releasing of grapes aroma. The grapes are left to macerate for at least 20 to 25 days before racking off.

 

Refinement:   

Once the malolactic fermentation process is completed, the wine is left to refine for 12 to 18 months in French Oak barrels (barriques). The refining process of bottled wine continues for 5 to 6 months. 

 

Dining:   

This wine is ideal with both game and roast dishes. It should be left to settle for 15 - 20 minutes before serving at about 18 C°.

A temperature control system ensures a maximum extraction of colouring agents while slackens the fermentation, to allow a full releasing of grapes aroma. The grapes are left to macerate for at least 20 to 25 days before racking off.

 

Refinement:

Once it has undergone malolactic fermentation, the wine is kept in stainless steel containers for 8 to 10 months and subsequently 2 to 3 months in bottles.

 

 

Dining:

This wine is ideal with traditional Italian dishes. It should be left to settle for a few minutes before serving at a temperature of about 18 C°.

Types of Grape:

Grechetto - Chardonnay

 

Wine making:

The grapes are entirely handpicked, placed in crates, and lightly crushed. Dry ice is added to protect the must from oxidation and to preserve the primary aromas. Fermentation occurs in temperature controlled basins at 16-18 C° for 13 to15 days.

 

 

 

 

 

Refinement:

The wine is placed in stainless steel basins to mature for 4 to 5 months.

 

 

 

 

Dining:

This wine is ideal with seafood and can be fully enjoyed when paired with traditional Umbrian cuisine. It should be served cooled at 11 to 12 C°.



The winery facilities are located in an ancient farmhouse.

Opening hours are TUE-THU-FRI 9.00-12.30

 

The red grapes come from Sangiovese, Merlot, Cabernet Franc and Cabernet Sauvignon vines, while the white ones from Grechetto and Chardonnay vines.

 

Processing takes place in temperature controlled stainless steel containers, while ageing occurs in French Oak barriques.
