Types of Grape: Cabernet - Sangiovese - Merlot

Wine making:    The grapes are entirely handpicked, placed in crates,
and lightly crushed.  The different types of grapes undergo alcoholic fermentation in separate containers, with the addition of selected yeasts.

A temperature control system ensures a maximum extraction of colouring agents while slows down the fermentation, in order to allow a full releasing of grapes aroma. The grapes are left to macerate for at least 20 to 25 days before racking off.

Refinement:    Once the malolactic fermentation process is completed, the wine is left to refine for 12 to 18 months in French Oak barrels (barriques). The refining process of bottled wine continues for 5 to 6 months.

Dining:    This wine is ideal with both game and roast dishes. It should be left to settle for 15 - 20 minutes before serving at about 18 C°.
